1998 Le Cicale
Sometimes the season presents us with unique conditions, enabling us to
make a wine that is completely different in style from that which is
"normal" for us.
For instance, the 1998 season was the hottest and driest on record for us
and the Madeleine Sylvaner reached ripeness levels that gave it an entirely
different profile from any other year. We added some of our Madeleine Angevine
grapes to give balanced acidity and allowed it to ferment with the same
native yeast that created the 1995 Terracotta. The tank fermentation lasted
over 2 years.
The wine was then aged in French oak and bottled in September, 2001. Le
Cicale is named for the cicadas that were resident in the vineyard. They
have not been seen or heard since.
The wine is dry, dark honey in colour, complex and earthy and goes well
with nutty cheeses and lighter meats. 13% alcohol. Best before 2003.
Sealed with a crown cap instead of a cork to better preserve the quality
of the wine.
You may find Le Cicale in several fine restaurants,
including the Delta Whistler Resort, Fairmont Chateau Whistler and the
Bearfoot Bistro in Whistler, Provence Marinaside, Raincity Grill, Bluewater
Grill and Bishop's in Vancouver and Canoe and Sooke Harbour House on Vancouver
Island. Phone ahead to be sure.
