Join us at Fairburn Farm for a nostalgic leisurely six course Sunday lunch at 1 pm on June 27th in Mara Jernigan's last year running Fairburn Farm Culinary Retreat & Guesthouse.
Mara is kicking off her Sunday Lunch on the Farm Series with a Winemaker's Lunch featuring Marilyn and Giordano. Enjoy sweeping views of the pasture and grazing water buffalo, the gardens and the mountains. She will feature feature a hand-made pasta course in her set menu based on the freshest local ingredients available that week. The six course lunch, including Venturi Schulze wines to match, is just $89 + tax and gratuity.

New Releases
Pilastro 2009
Pilastro is named for a village close to Giordano's home town in Italy. It combines Schönburger and Kerner to produce a fresh, aromatic white wine displaying the floral notes of the Kerner's Riesling parentage along with tones of peach and mandarin. The bright acidity is beautifully balanced by a touch of residual sweetness. 13.1% alc. Price: $19.50
Millefiori 2009
Fabulous dry white combination of
Siegerrebe and Ortega packed with fruit and
floral aromas and flavours with a zesty
grapefruit citrus finish. Al all-time Venturi-Schulze favourite. 13% alc. Price: $23.00
Terracotta 2009
A limited release deep golden composition
of Ortega & Siegerrebe: peach/apricot
nectar with peach and orange skin
complexity in a round and buttery mouthfeel.
It calls for a delicious, firm-textured
Cowichan free-range chicken with a rich
apricot sauce. 14.2% alc. Price: $32.00
Rosso di Collina 2008
This combination of our Pinot Noir and
Zweigelt was partially fermented in French
oak, producing a medium bodied dry
purple/red wine dominated by juicy cherry
with hints of barnyard, leather and spice. It
was finished with a year of French oak barrel
ageing. 12% alc. Price: $26.00
Brut Naturel 2007
Our classic dry white bottle-fermented
sparkling with complex fruit and fresh yeast
character. No sulphites and no dosage
(sweetness) added. This vintage is very similar to the 2006, recently described in an article on DNA Restaurant (Best Wine List in Montreal) in Food & Wine Magazine by sommelier Alex Cruz as "A great Vancouver Island sparkling wine. "It's better than Champagne, with stunning acidity and creaminess". 12% alc. Price: $32.00
Pinot Noir 2007
2007 was a challenging growing season, yet, with extraordinary effort, we were able to fully ripen our Pinot Noir, a delicious, complex classic from our 5 clones, aged in new
and one year old French Oak barrels. Rich
in dark cherry, brambleberry, minerality &
spice with lovely ripe tannins, bright acidity and an elegance not always found in the hotter vintages. Perfect for matching with roasted lamb shank or stew. It is unfined and not sterile filtered, so we recommend storing it upright (it is closed with a crown cap) and decanting it before serving. 13.2% alc. Price: $45.00
Brandenburg No.3 2007
Sweet amber wine with rich, earthy, smoky,
caramel-coffee notes. Pairs wonderfully with
foie gras, charcuterie, a cheese and
hazelnut platter, dark spiced meats, crème
brulée and spiced apple pie. No sulphites or
other preservatives added. 9% alc. Price: $35.50
2009 Verjus
Stock up on this delicious milder, fruitier alternative to lime or lemon juice. This bottling in a gorgeous tapered bottle with a screw cap was created from a blend of two of our white varieties, picked at the perfect stage of half-ripeness for verjus. We pasteurized the juice and it was also sterile filtered into the bottle. It exhibits elicious fruit tones and apple/citrus acidity. It must be refrigerated after opening and will be at its best if consumed within three months of opening. You won't believe how many amazing things you can do with it: Prepare a salad dressing or a delicious sauce, deglaze a pan, create a sorbet, a cocktail, or a multitude of culinary delights. Rosato di Collina 2006
This dry, full-bodied Pinot Noir rosé has a
subtle coppery-onion skin hue, fruit driven
nose, an attractive oily texture, great acid
structure and ripe fruit flavours. We made
this, our first Rosato di Collina, to satisfy our
own craving for a dry rosé. Chill before serving. 13.8% alc. Price: $23.00
Sole Rosso
This dry bright ruby red bottle-fermented
semi-sparkling wine was created from Pinot
Noir and Zweigelt. With its mild
effervescence, bright berry fruit aromas and
well balanced palate, it will add a sparkle to
any occasion and is a natural for those
summer get togethers with friends when
even a barbecue deserves a great wine.

Schönburger 2007
This wine from the cool 2007 season is a
delicate dry white wine with subtle spice and
mandarin orange aromas and flavours. It will
pair well with seafood, white meats and
cheese. The fresh citrus finish is enhanced
by a hint of cold fermentation spritz.
Schönburger is a European crossing of
Pinot Noir with an Italian table grape 12.7% alc. Price: $18.50
Venturi-Schulze Ancient Method Balsamic Vinegar
Our balsamic vinegar
is made from juice, simmered to a luscious concentration over an open
fire, and converted to vinegar by the slow, natural ancient process and aged in series of barrels from French
oak barriques to small barrels custom made for us near Modena, ranging
from 20 to 50 litres in size in five different varieties of wood: acacia,
ash, cherry, oak and chestnut, each adding its own unique character. Price: $49.90 per 250 ml bottle

Summer Hours
From April to December, we are open most Saturdays, Sundays and Holiday Mondays for drop-in tastings from 10 am to 5 pm (or dusk when the days are shorter). The $5 donation is waived with any wine purchase. Due to space restrictions, we requests that groups of 6 or more phone ahead to 250-743-5630. We are always happy to do sales on other days, so phone ahead to let us know what time you would like to come by and we will do our best to accommodate you. When the new wine shop is finished, we may be able to extend our drop-in hours.

Exclusive Group Tastings
If you are a Venturi-Schulze wine enthusiast, you can book an exclusive tasting for a group of your friends or business associates for the cost of the wines you would like opened. This enables you to include limited release wines that are not offered for tasting at other times. Generally, one bottle of wine can give a taste of about 1.5 oz for 18 people. We require a deposit of $60 at the time of booking, refundable if we receive 48 hours notice of a cancellation.

This week's bin was: asparagus, green beans, spinach, kale, cucumber, cherry tomatoes, basil, mizuna, sunflower sprouts and beets." I wish I had Brambles close by so I could pick up a weekly "Brambles Bin", too!
