Easy recipe. Perfect pairing!
One lamb shank per person. Rub with a little olive oil. Salt and pepper to taste. Place on a square of heavy aluminum foil with two or three whole cloves of garlic and a sprig of rosemary. Bring edges to the top and fold several times to seal. Fold the sides to seal completely so the juices will stay in the pouch. Bake at 350°F for 2½ hours. Carefully unwrap foil, place the shank on a warm plate and pour the juices on it with the garlic on the side. Serve with your vegetables of choice..
